After finding a recipe in Cooking Light for a Lowfat Chocolate Chip Cookie - I decided to try and see if I could use the same concept with Oatmeal Raisin Cookies - it was a success! I've also made these using spelt flour and they were just as yummy!! Ingredients:
3 tablespoons canola oil |
2 1/2 tablespoons honey |
3/4 cup brown sugar |
1/4 cup sugar |
2 teaspoons vanilla extract |
1 teaspoon butter flavor extract (optional) |
3 large egg whites |
1 1/2 cups whole wheat pastry flour |
3 cups oatmeal |
1 teaspoon baking soda |
2 teaspoons cinnamon |
1/2 teaspoon salt |
1 cup raisins |
Directions:
1. Preheat oven to 375 degrees. 2. In large bowl, Combine oil, honey, sugars, extracts and egg whites. 3. In second bowl, combine flour, oats, baking soda, cinnamon and salt. 4. Add dry to wet and combine. 5. Add in raisins. 6. Drop by rounded tablespoons onto silpat lined baking sheets. 7. Bake 8 minutes. |
