This was a recipe given to my Mom by her friend, Betsy, from Fort Lauderdale, Fla. It is delicious Ingredients:
2 cups sugar |
2 cups all-purpose flour |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1 1/3 cups oil |
3 cups carrots, finely grated |
4 eggs |
1/2 teaspoon salt |
1/8 lb margarine |
8 ounces cream cheese |
2 teaspoons vanilla |
1 cup pecans, chopped |
Directions:
1. Sift dry ingredients together. In a separate bowl, beat eggs and oil, then add carrots and dry ingredients. Beat. 2. Bake at 325 for about 30 minutes in 3, 9 inch round pans. 3. Mix icing ingredients together and frost the cake. |
