Betsy's Carrot Cake

This was a recipe given to my Mom by her friend, Betsy, from Fort Lauderdale, Fla. It is delicious
Ingredients:
2 cups sugar
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 1/3 cups oil
3 cups carrots, finely grated
4 eggs
1/2 teaspoon salt
1/8 lb margarine
8 ounces cream cheese
2 teaspoons vanilla
1 cup pecans, chopped
Directions:
1. Sift dry ingredients together. In a separate bowl, beat eggs and oil, then add carrots and dry ingredients. Beat.
2. Bake at 325 for about 30 minutes in 3, 9 inch round pans.
3. Mix icing ingredients together and frost the cake.
