It's just 173 calories-only half that of a typical frittata! Ingredients:
1 cup sliced vegetables (onion, tomato, and zucchini) |
1 egg |
2 egg whites |
salt and pepper, to taste |
1 tablespoon crumbled feta or grated parmesan |
Directions:
1. Preheat oven to 350°. Coat a small nonstick ovenproof pan with cooking spray, and sauté veggies over medium heat. Whisk together the next 3 ingredients (through salt and pepper); pour into pan, and stir until slightly solidified. Bake 15-20 minutes or until almost firm. Sprinkle frittata with cheese, and bake until firm; serve. |
