Ingredients:
6 4-5oz boneless/skinless chicken breast halves |
1/4 teaspoon(s) black pepper |
2-3 teaspoon(s) curry powder |
1 teaspoon(s) dry mustard (or 1 tbsp dijon mustard) |
1 tablespoon(s) light brown sugar |
1 medium chopped onion |
2 cup(s) orange juice |
1/2 teaspoon(s) salt |
1 cup(s) uncooked long grain rice |
1/4 cup(s) water or fat free chicken broth |
Directions:
1. Combine curry powder, salt, and pepper. Rub seasonings all over chicken. 2. Cook onion in skillet coated with cooking spray 6-7 min or til softened. Add orange juice, water/broth, rice, sugar, and mustard. Arrange chicken over rice. Bring to boil over medium-high heat. Cover, reduce heat to low, and simmer 20 min. Remove from heat and let stand, covered, 5 min or til liquid is absorbed. |
