Best Spinach Artichoke Dip Ever |

Ingredients:
2 tablespoon(s) butter |
4 tablespoon(s) garlic, minced |
10 ounce(s) frozen spinach, thawed and drained |
2 can(s) artichoke, rinsed & drained |
3 tablespoon(s) butter, additional |
2 tablespoon(s) flour |
1.5 cup(s) milk (more if needed) |
8 ounce(s) cream cheese, softened |
1/2 cup(s) feta, crumbled |
1/2 cup(s) parmesan, grated |
3/4 cup(s) pepper jack cheese, grated |
1/4 teaspoon(s) cayenne |
Directions:
1. melt 2 T butter in skillet over medium heat - add artichokes and cook until liquid is cooked off and they start to get a little color - remove from pan 2. in same pan, melt 3 additional T of butter and whisk in 2 T of flour until it makes a paste - cook for a minute or two, then pour in milk - stir and cook until slightly thickened (add more milk as needed) 3. add cream cheese, feta, Parm, pepper jack and cayenne and still until cheeses are melted and sauce is smooth - add spinach and chop artichokes to the sauce - stir to combine 4. pour into buttered baking dish - top with extra pepper jack and bake at 375 for 15 minutes or until cheese is melted and bubbly |
