64-oz. apple cider vinegar |
32-oz. water |
1-oz. celery seed |
2-oz. ground (cayenne) red pepper |
1.75-oz. ground double superfine mustard |
1.4-oz. mustard seed (add gradually while cooking) |
5-lbs. shrimp (peeled) |
1/2 cup salt (add last 4 minutes) |
Directions:
1. In a large stock pot (10-12 quarts) combine together the vinegar, water, celery seed, red pepper, ground mustard, a small portion of the mustard seed, and bring mixture to a rapid boil. reduce heat to maintain medium boil. Add shrimp to mixture, cover and boil 12-13 minutes. Stir periodically and add mustard seed gradually throughout cooking time. Stir in salt during last 4 minutes of cooking time. Pour into colander, cool and refrigerate overnight before serving |
