I got this off a salmon can, mostly. I added honey wheat breadcrumbs instead of the regular kind, and wow! What a surprise.
Ingredients:
1 can salmon, undrained, bones picked out
3 slices honey wheat bread
2 eggs
2 tsp lemon juice
1/4 tsp salt
2 tablespoons parsley
dash dill (opt.)
butter-flavor shortening or olive oil
Directions:
1. Tear bread into crumbs or use food processor.
2. Mix all ingredients.
3. If too dry, add a smidgen of water.
4. Melt small amount of butter-flavor shortening (or olive oil) in pan.
5. Dip batter in small amounts into pan, flattening each patty. The batter will probably not hold together well.
6. Cook patties on medium high till fairly crispy.
7. Remove patties to paper towel-covered plate.
