This is based on a recipe I found . It's super simple, yet unbelievably delicious. Ingredients:
4 cups rhubarb, chopped |
1 1/3 cups sugar |
6 tablespoons flour |
2 tablespoons butter |
1 ready-made pie crust |
Directions:
1. Preheat oven to 450°F. 2. Put bottom pie crust in pie plate, do not trim. Combine sugar and flour. Sprinkle 1/4 mixture over bottom crust. Heap rhubarb over mixture. Sprinkle remaining mixture over rhubarb and dot with small pieces of butter. Fold crust inward. (You could also add a top crust and just make it a pie, but I like a little of the rhubarb to be lightly browned.). 3. Place pie on lowest oven rack. Bake for 15 min., then reduce temperature to 350°F and continue baking for 40-45 minute You may want to rim the crust with foil when you reduce the temperature (easier to do if you pre-make the foil pieces before putting the pie in the first time). |
