This is my best potato salad and throughout the years my children's friends as well as my family and family friends always request this from me. No big secret. I use only yellow or gold potatoes, prepare the salad when warm and prefer a top quality mayo such as Helmanns. Read more . So this is requested for Father's day tomorrow as well a s a food gift for a birthday present this week! Ingredients:
5 lbs yellow potatoes cooked in their skins |
1 tbs dijon mustard |
1 1/2 cups mayonnaise or as desired to make moist and creamy |
kosher salt to taste |
fresh black pepper to taste |
1 tbs chopped fresh chives or 2 tbs chopped red or white sweet onion |
1 tbs dried parsley or 2 tbs fresh chopped parsley |
4 hard boiled eggs chopped |
Directions:
1. Remove/slip skin from potatoes while potatoes are warm 2. Cube as desired 3. Place in a large mixing bowl 4. Gently stir in parsley and chives or5 onions 5. Place the mayo and mustard over the mixture 6. Sprinkle on the salt and pepper 7. With a spoon gently mix potato salad 8. Lastly gently stir in the hard boiled eggs 9. Either serve warm or well chilled 10. Note: I used chive flowers for ganish |
