I have been on a search for the past year looking for the perfect pancake. I am almost there. I still have a little tweaking to do, and I will update when I do. Till then, Here is what I came up with this morning. Read more . You can add fruit to this if you like. Just make sure to add it while on the griddle. Ingredients:
1 1/2 cups of flour |
3 tbs powdered sugar. ( you can use regular sugar if you don't have any.) |
3 tsp baking powder |
1/2 tsp salt |
whisk dry ingredients in separate bowl. |
3 eggs ( beaten) |
3 tbs butter (melted) |
1 tsp vanilla |
1 drop of almond extract |
buttermilk or milk. add enough to make the desired consistency. i try to make it similar to cake batter. but if your like my hubby you might want it thinner. i use about 1- 1 1/2 cup buttermilk. |
Directions:
1. Mix dry ingredients in separate bowl. 2. Mix wet ingredients. Then add to dry ingredients. 3. Mix thoroughly. 4. Heat your griddle to about 375*. Wipe down with oil or any non stick cooking spray. 5. When griddle is ready, add a ladle size amount of mix onto griddle. Repeat to make more. 6. Wait until bubbles start to form approximately 1-2 min. Then flip over pancakes and cook till golden brown. 7. You can add blueberries or any other fruit if desired.while on the griddle. |
