Yummy basic recipe , you can change biscuit base to suit topping of choice. Have yet to find someone who doesn't love it. Have used shortbread, ginger nuts as bases and lemon, lime, plum compote, strawberries as toppings, all work well Best left overnight as lemon juice helps it to set Ingredients:
1 (8 ounce) packet biscuits |
100 g butter |
300 ml double cream |
200 g light cream cheese |
1 lemon (rind and juice) |
100 g icing sugar |
Directions:
1. Base. 2. Melt butter for base in a pan. 3. Add crushed biscuits and combine. 4. Place in base of loose based tin. 5. Chill base in fridge for 20 minutes. 6. Topping. 7. Beat cream to until it holds it's shape, firm peaks. 8. Fold in Philadelphia and icing sugar. 9. Add lemon juice and rind and fold inches. 10. Pour topping over set base. 11. Set in fridge for a few hours or overnight. 12. Add cool topping of choice. 13. Turn out and serve. 14. Enjoy! |
