As proof of my lifelong love of chocolate, I give you the recipe that is listed in my baby book as my favorite food. I still request it every year for my birthday, and I make it for St. Patrick's Day, but it's rich and creamy any day. I used to make it for an after-school snack when I was in junior high. Pour milk over your serving or slather whipped cream. Sprinkle toasted slivered almonds for added yumminess. I suggest small portions, especially for children. My kids love to lick the pan when I'm done. I've also had great success with this recipe in making a chocolate pie with a vanilla wafer crust (sprinkle vanilla wafer crumbs on top) Ingredients:
2 cups milk |
2 ounces unsweetened chocolate squares |
1 cup sugar |
3 tablespoons cornstarch (or 1/3 cup flour) |
1/4 teaspoon salt |
3 egg yolks |
1 teaspoon vanilla |
2 tablespoons unsalted butter |
Directions:
1. In small saucepan, melt chocolate in milk over medium heat to scalding; do not boil. 2. In a medium saucepan, combine sugar, corn starch, and salt. 3. Gradually pour in hot milk mixture, stirring constantly. 4. Cook over medium heat, stirring, until mixture boils; it's good exercise for the arms; works off calories before eating! 5. After it thickens, stir two minutes longer. 6. Remove from heat. 7. Beat egg yolks in a small bowl. 8. Add 1 tablespoon of hot mixture in yolks, stirring constantly so lumps do not form. 9. Add 1 tablespoon more pudding, stirring. 10. Stir yolks into the hot pudding and cook for two minutes, boiling gently, and of course, stirring. 11. Remove from heat. 12. Add vanilla and butter. 13. Dip into bowls while still warm. |
