These are incredible. I have served this with various cheeses sprinkled over the top and they are good that way as well. Experiment. Ingredients:
2 large baking potatoes |
3 tablespoons unsalted butter |
3 tablespoons vegetable oil |
1 medium onion sliced thin and separated into rings |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Peel potatoes then slice into thin slices. 2. Heat butter and oil in heavy skillet then spread thin layer of potatoes into fat and cook for 5 minutes. 3. Then layer onion rings and remaining potato slices in skillet and turn with broad spatula. 4. Cook potatoes until golden brown then turn again. 5. Cook and turn until potatoes are crisp and brown then season with salt and pepper. |
