Best Hawaiian Coconut Loaf |

Thought I would share my Coconut Loaf as I'm looking at all my recipes from our time living in Hawaii. Ingredients:
1/3 cup shortening |
2/3 cup sugar |
2 eggs, well beaten |
1 cup moist shredded coconut |
1 cup mashed banana |
1 3/4 cups sifted pastry flour |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon salt |
Directions:
1. Preheat oven to 350 degrees. 2. Grease a loaf pan. 3. Beat shortening in mixing bowl until soft. 4. Blend in sugar thoroughly. 5. Add egg and beat well. 6. Stir in coconut. 7. Alternately add mashed bananas and sifted dry ingredients. 8. Turn batter into loaf pan. 9. Bake 1 hour and 18 minutes. |
