I was trying to come up with a healthy, but tasty snack to take with me- as I am a mom on the go! I try to avoid food with high fructose corn syrup, and its in so many snacks these days. This is a great way to hide healthy grains in a delicious treat! Read more ! :) Ingredients:

1 cup rice puffs |
1 cup rolled oats |
1 cup rolled wheat |
1/2 chopped almonds |
1/2 sunflower seeds |
1/2 cup flax seeds |
1/2 cup dried cranberries |
glaze |
2/3 cup light brown sugar |
1/3 cup + 1 tbs honey |
1/4 cup butter (half a stick) |
1 tsp vanilla |
Directions:
1. toast any raw grains in the oven for about 5 min. at 400 degrees, mixing half-way thru 2. line 13x9 inch pan with foil to spread granola in 3. mix all dry ingredients in very large bowl, or stock pot (I like to use my 8 qt. pot) 4. heat all glaze ingredients in heavy sauce pan on stove top at medium heat 5. bring to boil, reduce heat stirring constantly, simmer 2 minutes 6. pour glaze over dry ingredients, mix well 7. spread in foil lined pan, smooth flat with back of spoon 8. smooth a LOT, as you want the grains to be packed together so the bars don't fall apart! 9. let sit for 2 hours 10. remove granola in foil and place on counter, using a large knife, cut into bars 11. I like to individually wrap the bars in sandwich bags, because i found out the hard way, that they stick together! |
