This bread is a good way to use extra zucchini. Ingredients:
3 c. flour |
1 c. white sugar |
1 c. brown sugar |
1 tsp. baking powder |
1 tsp. baking soda |
1 tsp. salt |
2 tsp. vanilla |
1 tsp. cinnamon |
1/2 c. vegetable oil |
1/2 c. melted butter |
3 eggs, beaten |
1 c. coconut |
2 c. raw grated zucchini |
1 c. grated apple, peeled |
1 c. chopped nuts |
Directions:
1. Preheat oven to 350° F. 2. Grease and four 2 loaf pans. 3. Combine all ingredients. Mixture will be thick. 4. Pour evenly into pans. 5. Bake 1 hour. 6. Cool in pans 15 minutes. Turn onto cooling rack. |
