A yummy sweet potato casserole with a coconut twist. Ingredients:
3 medium sweet potatoes |
3 eggs |
1/2 cup butter, melted |
2/3 cup sugar |
1 cup milk |
1/2 teaspoon vanilla |
1/2 teaspoon nutmeg |
1/2 cup shredded coconut |
1/2 cup butter, softened |
1 cup brown sugar |
1/2 cup flour |
2 cups shredded coconut |
Directions:
1. Cook and mash potatoes. Add rest of ingredients except coconut. Beat until smooth. Stir in coconut. Pour into baking dish. 2. For topping: Mix all ingredients until crumbly. Sprinkle on top of casserole. Bake at 375 for one hour. |
