I use this recipe (but usually my variation) so much, and it is so useful, quick and easy that I thought I should post it. It is from Better Homes and Gardens NEW COOK BOOK. Ingredients:
1 3/4 cup sifted all-purpose flour |
1/4 cup sugar |
2 1/2 teaspoons baking powder |
3/4 teaspoon salt |
1 well-beaten egg |
3/4 cup milk |
1/3 cup salad oil or melted shortening (i usually use vegetable oil) |
Directions:
1. oven 400 degrees 2. Sift dry ingredients into bowl; make well in center. 3. Combine egg, milk, and oil. 4. Add at once to dry ingredients. 5. Stir quickly just till dry ingredients are moistened. 6. Fill greased muffin pans 2/3 full. 7. Bake at 400 degrees for 20-25 minutes. 8. Makes 10. |
