I was a little concerned that it was so easy and had so few ingredients. I have to say it lived up to the name. Hope you enjoy. Ingredients:
2 cups sugar |
1 1/4 cups oil |
4 large eggs |
2 cups flour |
2 teaspoons baking soda |
1 tablespoon cinnamon |
1 teaspoon salt |
3 cups carrots, grated |
1 cup walnuts |
12 ounces powdered sugar |
6 ounces cream cheese, softened |
1 teaspoon vanilla extract |
2 tablespoons butter |
2 tablespoons milk |
Directions:
1. In a large bowl, beat sugar and oil. Add eggs and beat well. 2. Sift together flour, soda, cinnamon, and salt into egg mixture; mix well; fold in carrots and nuts. 3. Place batter in greased 9x13 pan; bake 1 hour and 10 minutes in a 350 degree oven. 4. Frosting: Beat together powdered sugar, cream cheese, vanilla, butter and milk; spread on cooled carrot cake. |
