Low fat and delicious. I love to make meatloaf sandwiches with the left-overs. Ingredients:
1 1/2 lbs extra lean ground beef |
1/2 cup onion, diced |
2 garlic cloves, minced |
1/4 cup fat free chicken broth |
1/2 cup roasted red pepper, canned, diced |
1/4 cup tomato paste |
1/2 cup chili sauce, bottled |
2 tablespoons cajun seasoning |
2 tablespoons worcestershire sauce |
1 cup seasoned dry bread crumb |
Directions:
1. Preheat oven to 350°F. 2. Saute onion and garlic in chicken broth until soft. 3. Stir in red peppers, tomato paste, chili sauce and Cajun spices. 4. Cook on low heat for 10 minutes; cool slightly. 5. In a large bowl, combine ground beef, sauteed onion mixture and bread crumbs. 6. Form into a loaf shape and place into ungreased loaf pan. 7. Brush with 2 tablespoons of chili sauce. 8. Bake until cooked through, 40-50 minutes. 9. Cool before cutting into slices. |
