This is a spicey, sweet hot Buffalo type of wing served with Blow your Mind Blue Cheese Sauce ( separate post ). recipe from a chef who uses the twice fry technique. This recipe ,the chef double frys the wings for the ulmost cripsness Once on 275 to cook them and then at 375 to really get them hot and crispy. Read more . Don't use frozen, only fresh chicken parts for best results. Of course one can use any sauce they want but this Asian inspired sauce is a hit with the customers Although this has some added steps, the chef says it makes all the difference in cripsy texture Ingredients:
5 lb chicken fresh wings and drumettes ( 20 to 25 pieces ) |
4 tbs kosher salt |
4 tbs asian hot chiki sauce ) or to your liking |
2 tbs honey |
2 tbs butter melted |
1ttbs soy sauce |
2 tbs fresh chopped cilantro |
4 cups oil |
salt and pepper to taste |
Directions:
1. Place chicken in a large bowl and sprinkle with salt and pepper. 2. Toss to coat 3. Place on baking sheet and cover with plastic and chill for 12 hours 4. When ready to cook, remove from the fridge and pat dry with paper towels, brushing away any salt 5. Let sit 10 to 15 mins at room temperature 6. Whisk together the chili sauce, honey, butter, soy sauce and cilantro. 7. Check the sauce by tasting and add more honey it too hot. 8. Set aside. 9. Place oil in a large dutch oven and heat till 275 F. 10. Divide chicken in 4 batces and fry wings for 8 minutes 11. When all are cooked increase heat to 375F and fry the batches again for 2 minutes or till crispy 12. Transfer the pieces again to a paper lined baking sheet to drain and salt and pepper to taste 13. Remove chciken pieces to a large bowl and pour over the prepared sauce and toss to coat. 14. Serve immediately with blow your mind Blue cheese dip if desired |
