My Grandma used to make this all the time when I was a child. I still have vivid memories of her baking this on a cold winter's day. Ingredients:
2/3 cup oil |
2 cups mashed bananas |
1 teaspoon vanilla |
1 teaspoon baking soda |
1/2 cup walnuts, chopped (optional) |
1 1/2 cups sugar |
2 eggs |
2 cups flour |
1/2 teaspoon salt |
Directions:
1. Cream oil and sugar together. 2. Blend in bananas, eggs and vanilla beating well with a mixer. 3. Combine dry ingredients with wet ingredients and mix well. 4. Pour mixture into 3 8x3-inch loaf pans or one 9x13-inch loaf pan 5. Bake at 350°F for 30-40 minutes. |
