A co-worker makes this cake for birthdays. We all ask for it, so finally she just gave us the recipe. Don't pour the sauce on until serving! Warm the sauce a little then pour it on......SO GOOD! It's called a pudding sauce but it's more like a really light caramel sauce (Not like that super sweet stuff for ice cream though). You won't be sorry you tried this one. Makes 2 8 or 9 inch cakes, but double recipe for 9x13 pan. Ingredients:
1 cup sugar |
1/4 cup soft butter |
1 egg, beaten |
2 large unpeeled apples, shredded |
1 cup sifted flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/4 teaspoon salt |
1/2 cup chopped walnuts |
1/2 cup butter |
1 cup sugar |
1/2 cup light cream |
1 dash nutmeg (prefferably fresh grated) |
1 1/2 teaspoons vanilla |
whipped cream |
Directions:
1. Preheat oven to 350. Cream sugar and butter. Add egg. Add shredded apples to butter mixture. Sift dry ingredients in a seperate bowl and add to apple mixture. Add walnuts. Pour into two greased 8 or 9 inch pans for about 45 minutes. 2. Sauce: Heat butter sugar and cream together over low heat 10-15 minutes stirring occasionally until blended and thickened. Add vanilla and nutmeg. Pour over cake when ready to serve, top with whipped cream. |
