This is an incredibly moist and simple to make banana bread that takes literally five minutes to throw together. And it's low fat! This recipe is pretty much foolproof so feel free to play around and improvise. If you really want to reduce the fat you can substitute applesauce for the butter. I adapted this recipe from one printed in Cookie Magazine (March 2006). The original recipe is called Aunt Holly's Banana Bread . Enjoy! :-)
Ingredients:
3 -4 ripe bananas
1/4 cup melted butter or 1/4 cup canola oil
1/3 cup granulated sugar
1/3 cup brown sugar (can substitute with honey)
1 1/2 cups flour
1/4 teaspoon salt
1 egg, beaten
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 teaspoon baking soda
chocolate chips (optional- use as many as you want or none at all) or nuts (optional- use as many as you want or none at all)
Directions:
1. Preheat oven to 350°F
2. Mash the bananas in a bowl. Add all the remaining ingredients and mix well with a wooden spoon.
3. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes. Slice and serve.
