A nice creamy soup that makes for a good fall/winter warmer. Can be eaten as a meal, or served in a mug as an appetizer/warmer. Ingredients:
1 lb backfin crab meat |
1 st butter |
1/2 c flour |
1/4 ts pepper |
1 qt half and half |
1 1/2 c chicken broth |
1 tb old bay seasoning |
1 c milk |
Directions:
1. Melt butter and blend in flour. Stir until smooth. Slowly stir in chicken broth. The mixture will visibly thicken and become gravy-like. Add pepper and simmer for 2 minutes. Add half and half and milk slowly. Slowly cook and stir until fully thickened. Add crab meat. Heat and serve. 2. Comment: The original recipe called for 1 Tb parsley. It didn't suit my taste, so I've left it out to make a creamy soup that can be served in either a bowl or mug. |
