Rich and creamy yet deceivingly simple, this cheesecake recipe has turned me into someone who is consistently disappointed by *other* cheesecakes. Ingredients:
1 1/2 cup graham cracker crumbs |
1/4 cup powdered sugar |
1/3 cup butter, melted |
2 pkg cream cheese (500 g total), softened |
2 eggs |
2/3 cup sugar |
1 tsp vanilla |
1 cup whipping cream |
1 tbsp powdered sugar |
1 tsp vanilla |
2 cup fresh berries (blackberries, rapberries, strawberries, or blueberries) |
Directions:
1. Mix first three ingredients and press into a pie plate to form a crust. 2. Mix cream cheese, eggs, 2/3 cup sugar, and 1 tsp vanilla in a bowl. 3. Fill pie crust with mixture. 4. Bake at 350°F for 25-30 minutes (27 minutes for us). Do not overcook! 5. Allow cake to cool completely. 6. Whip cream, 1 tbsp sugar, and 1 tsp vanilla until stiff peaks form. 7. Top cake with whipped cream and berries. Any left over berries should be eaten by the handful. |
