I have been making this cake for 30 years! This is a very moist and dense cake.It is the best carrot cake ever. Pour yourself a large glass of milk and enjoy!
Ingredients:
2c.flour
2 tsp.baking powder
1 1/2 tsp.cinnamon
2 tsp.salt
2 tsp. baking soda
1 c. oil
2 c. brown sugar
4 eggs
1 c. chopped walnuts
3 c.grated carrots
Directions:
1. Mix dry ingredients; add oil and blend. Add eggs one at a time and beat after each addition. Add carrots and nuts and blend well. Put batter into a greased and floured 13x9 rectangle cake pan (or 2 9 round pans) for 45 minutes at 350 degrees. Cool and frost with
2. cream cheese frosting. 1 8oz. pkg. cream cheese
3. 1/2 c. margarine
4. 1 lb.box of powdered sugar
5. 2 tsp. vanilla
6. Mix together untill smooth and spread on cooled cake.I usually sprinkle with extra chopped walnuts for garnish.
