Easy, fluffy and light buttermilk pancakes made with buttermilk powder, for those of us who don't actually drink buttermilk. Ingredients:
1 1/4 cups all-purpose flour |
1/4 cup sugar |
1 tsp baking powder |
1 tsp baking soda |
1/8 tsp salt |
4 tbsp buttermilk powder |
1 1/4 water |
1/4 cup vegetable oil |
1 egg |
Directions:
1. Mix all wet ingredients together. 2. Mix all dry ingredients together. 3. Mix both until just blended. 4. Let sit for 5 minutes. 5. Portion by 1/4 cup fulls onto hot griddle set at 350f. 6. Cook until dry around edges and bubbly in middle, flip and cook until golden brown. About 1 minute each side. 7. Makes 10 cakes. 8. Note: substitute fresh buttermilk for water and powder if using. |
