Butter Tarts are fairly simple, but sometimes a warm butter tart is the only thing that will hit the spot. Ingredients:
2/3 cup real butter (nothing else will do!!!) |
2 cups brown sugar |
4 tbsp corn syrup |
1 tsp vanilla |
4 eggs |
1/4 tsp nutmeg |
1/2 cup currants |
1 cup raisins |
1/2 cup walnuts (optional) |
Directions:
1. Preheat the oven to 400F 2. Line 12 tart tins with pastry 3. Beat the butter and sugar together 4. Add the corn syrup and beat again. 5. Add the eggs, one at a time, beating between them. 6. Add the vanilla, nutmeg, currants, raisins and walnuts if you're using them 7. Mix well 8. Fill each tart about 2/3 full 9. Bake for 5 minutes at 400F and then reduce the oven to 375F and bake for another 15 or 20 minutes until brown and firm to the touch. |
