We (2) eat this as dinner with a salad and we get 2 meals out of it Ingredients:
loaf of bread (the long skinny one) |
olive oil for brushing |
shredded feta |
topping |
2 tomatoes cored, seeded, chopped |
1/2 cup parsley chopped |
3 green onions chopped |
3 cloves garlic grated |
1 pepper chopped |
pinch salt and pepper |
2 tbslps each lemon juice and olive oil |
Directions:
1. Mix topping ingredients and let sit on counter for 1 hour 2. slice bread and brush with olive oil 3. broil on high 2 mins 4. add cheese and broil 1 min 5. add topping |
