One word: AMAZING!- I came up with these because I was sick of dry tasteless muffins. Heres a recipe that blows them out of the water! Enjoy!!! Ingredients:
1/2 cup butter ( room temp) |
1 1/4 cups granulated sugar |
2 large eggs |
1 teaspoon vanilla extract |
2 teaspoons baking powder |
1 teaspoon salt |
1 -2 cup blueberries (fresh -or- frozen) |
1 3/4 cups all-purpose flour |
1/2 cup milk or 1/2 cup vanilla-flavored soymilk |
1/2 cup heavy cream |
1/2 cup sour cream |
Directions:
1. Heat Oven to 350. 2. In bowl, mix butter until creamy, add sugar until pale and fluffy. 3. Add eggs one at a time. 4. Beat in Vanilla, Baking Powder, Salt, Milk, Heavy Cream, Flour, and Sour Cream. DO NOT OVERBEAT. 5. Fold in Blueberries. 6. Pour batter into muffin tins, using an ice cream scoop for even amounts. 7. Bake 350 for 25- 30 mins- until Golden Brown. 8. Let cool for 5 minutes. 9. Enjoy! |
