This is the best blueberrry cake you will ever have. my mom's recipe.came from her old good housekeeping cookbook!!(1942) Ingredients:
1 3/4 cup flour |
2 tsp. baking powder |
1/4 tsp salt |
1/4 cup shortening |
1 cup sugar |
1 egg |
1/2 cup milk |
1 tsp. vanilla |
1 1/4 cup blueberries |
Directions:
1. Sift first 3 ingredients in bowl 2. in separate bowl 3. cream shortening until smooth, add sugar mix till light 4. add egg,beat well 5. add flour mixture alternately with combined milk and vanilla 6. beating after each addition 7. coat blueberries with 4 tsp. flour 8. fold in batter 9. sprinkle with sugar on top 10. pour into greased 8x pan 11. i usually double this recipe and use a 9 x 13 pan 12. 350 degress 40-50 minutes |
