Discussing with friends what to do with fresh garden beets, I wanted something different than borscht, beet relish, Harvard beets or beet bread etc.. When my friend said she makes beet salad like her potato salad;it never occurred to me to make this fantastic but easy salad! Read more ! Make it just like you would your potato salad-only use beets! It is most Delicious, looks festive . Mayo does not have to be the dressing; some friends discussed using a sour cream or yogurt based dressing also, but I loved this with the basic mayo potato salad recipe Ingredients:
4 large garden fresh beets, cooked and peeled and chopped as you would your potatoes |
1 white onion fine chopped |
4 large eggs hard cooked |
dill weed to taste ( optional ) |
enough mayonnaise to bind |
fresh cracked black pepper and sea salt to taste |
1 tsp sugar or to taste |
Directions:
1. Cook beets till fork tender and drain 2. Cool, peel, and coarse chop as for potato salad 3. Combine with chopped hard boiled eggs, mayo to bind, some dill weed to taste and salt and fresh grated pepper to taste. 4. Serve immediately at room temperature or chill well and serve |
