My favorite indulgence ever. Modified a recipe in my grandma's old cookbook. Ingredients:
in order of appearance |
1/2 cup of butter ( i use the 50/50 blend with olive oil) |
1 cup brown sugar |
3 eggs |
1 tablespoon of vanilla extract |
1/2 cup of milk |
1/2 teaspoon of baking soda |
2/3 tablespoon of fresh squeezed lemon juice |
2 1/5 cups all-purpose flour |
1/2 teaspoon of soda |
2/3 teaspoon sea salt |
4 tablespoons of cinnamon |
2 tablespoons of nutmeg |
2 cups of freshly mashed overly ripe bananas |
Directions:
1. Preheat the oven to 350'F 2. cream together shortening and sugar 3. add eggs and beat well 4. add vanilla 5. in a seperate small cup combine milk and first mention of baking soda and fresh lemon juice 6. stir these ingredients together than add to shortening sugar egg mixture 7. in a third bowl combine flour, 2nd mention of baking soda, sea salt, cinnamon and nutmeg 8. add flour into cream mixture a lot at a time 9. alternatively add mashed bananas, blending well after each addition 10. keep chunks of banana 11. pour into wellgreated 7X7-inch loaf pan 12. bake for 45 minutes or until knife comes out of center clear (maybe a little mashed banana may show but if there is sugary cream mixture on the knife as well, then it isn't ready) 13. yummmmm enjoy with green tea! |
