This is my version of a burger I saw Tyler Florence make. Everyone loves them! If you aren't a wimp like me, add a little chopped jalepeno or chipotle pepper to the cheese mixture. Ingredients:
1 lb bacon, fried and crumbled |
2 cups shredded havaarti cheese |
2 cups shredded swiss cheese (or any cheeses that melt well) |
3 lbs. ground sirloin, 85 % lean |
1 envelope beefy oinion soup mix |
2 t. chopped garlic |
4 t. worcestershire sauce |
2 t. heinz 57 sauce |
fresh ground black pepper |
1/4 c. grated parmesan cheese |
2 eggs |
1 loaf of french or italian bread, sliced thick, on the bias into 16 slices |
melted butter |
avacado slices |
thick, ripe red tomato slices |
red onion slices |
green leaf or romaine lettuce |
herbed mayo (real mayo, garlic, chives & dill) |
Directions:
1. The night before, or the morning of meal combine herbs & mayo, cover and chill 2. Fry bacon and crumble 3. Mix with cheese 4. Mold 8 patties, squeezing together to make them hold 5. Wrap each in plastic wrap and place in the freezer 6. 1 hour before cooking combine remaining ingredients from meat to eggs by hand in large mixing bowl. 7. Form into 8 large patties 8. Place one cheese/bacon patty on top of each meat patty 9. Work meat around the cheese patty until it is submerged in the center of the meat, and completely covered 10. Allow patties to come to room temperature 11. Place on lightly oiled grill rack 12. Turn only once, halfway through cooking 13. Cook to internal temperature of 160 14. Lightly brush melted butter on bread and grill 15. Serve burgers with herbed mayo, avacado, tomato, onion, and lettuce 16. Good kosher deli pickles and oven roasted red potatoes make great accompaniments. |
