From the ladies who lunched...mom's recipe from the early 60's. Hat and glove era. Ingredients:
2 avocados |
8 slices of bacon fried crisp |
homemade french dressing made with |
1/4 cup sugar |
1/4 cup of vinegar |
1/2 cup catsup |
1 tsp salt |
1 tsp worchestershire sauce |
1 tsp of paprika |
1 clove of garlic |
1/2 medium sized onion |
1 cup of salad oil |
Directions:
1. Don't think you can substitute any old French dressing. There is a world of difference in French dressings and somehow, this one is absolutely perfect with the avocado. 2. Plae everything except oil in your electric blender. 3. If you don't have one, you'd better forget the whole thing. 4. I do not think you could blend everything together without it. 5. Let blend a minute or two until smooth and creamy, then very slowly add one cup of salad oil. 6. Keep blending an additional or two until very thoroughly mixed. 7. Cut each avocado in half, remove the meat and save the shells. 8. Cut meat in cubes and place in mixing bowl. 9. Pour a generous amount of dressing over the avocado cubes. 10. Let stand for several hours. 11. Then pile avocado cubes back into shells, top with generous amounts of crumbled crisp fried bacon. |
