Besan flour veg omelette
Ingredients:
1 cup besan flour
2 tbsp olive oil
1/2 tsp sea salt
1 tsp cumin powder
1/4 cup cilantro
1 tomato, small, diced
1 hot pepper, green
1/2 red onion, diced
1 tsp cayenne pepper
1/2 tsp ground black pepper
1/2 tsp coriander powder
1/3 cup zucchini, grated
Directions:
1. Mix besan flour with water 3/4 c to 1 c, add spices, let sit. Chop veggies fine - add some oil to fry pan. Either stir in veggies to flour mix ot pour 1/4 mixture into pan and fry on both sides until edges crispy.
