Bertha's Mullitgatawny Soup |

Bertha is a lady at my church and makes this very nice soup. I have not made it yet but have had it made by Bertha and it is good. Ingredients:
1 medium onion, sliced |
1/4 cup butter |
1 medium carrot, diced |
1 stalk celery, diced |
1 green pepper, diced |
1 medium apple, pared, cored, and sliced |
1 cup cooked chicken, diced |
1/3 cup flour |
1 teaspoon curry powder |
1/8 teaspoon mace |
2 whole cloves, chopped |
1 sprig parsley, minced |
2 cups beef consomme |
1 cup cooked tomato |
salt and pepper |
Directions:
1. Saute onion in butter in dutch oven. 2. Stir carrot, celery, green pepper, apple and chicken. 3. Stir, gradually add remaining ingredients. 4. Simmer covered for 30 minutes. |
