It was submitted by Barbara McCalley from Allison Park, PA, who says: Since the raspberry flavor come from jam, this versatile vinaigrette is convenient to make year-round. It's wonderful with any tossed salad or mix of greens. Ingredients:
3 tablespoons seedless raspberry jam |
2/3 cup canola oil |
1/3 cup red wine vinegar |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Place jam in a small microwave-safe bowl. 2. Microwave, uncovered, on high for 10-15 seconds or until melted. 3. Whisk in the oil, vinegar, salt and pepper. 4. Store in the refrigerator. |
