These cookies are a wonderful shortbread with a touch of fruit on the top. very easy to make and always a hit Ingredients:
1 cup butter (no substitutes), softened |
2/3 cup sugar |
1/2 tsp almond extract |
2 cups all purpose flour |
1/3 -1/2 cup seedless raspberry jam, or whatever your favorite is |
glaze |
1 cup confectioners sugar |
2-3 tsp water |
1/2 tsp almond extract |
***i add a little extra water and you can also add about 1/2 tsp of jam if you want |
Directions:
1. Preheat oven to 350 degrees 2. In a mixing bowl, cream butter and sugar. Beat in extract; gradually add flour until dough forms a ball. Cover and refrigerate for 1 hour or until easy to handle. 3. Roll into 1 inch balls. Place 1 inch apart on ungreased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center. Fill with jam. 4. Bake at 350 degrees for 14-18 minutes or until edges are lightly browned. Remove to wire racks to cool. Spoon additional jam into cookies if desired. 5. Combine Glaze ingredients; drizzle over cookies. 6. Makes approx 3 1/2 dozen cookies |
