Easy, breezy and adults and kids both loved them. Ingredients:
1 c butter, softened |
2/3 c sugar |
1/2 tsp almond extract |
2 c flour |
1/3 to /12 c seedless raspberry jam |
glaze |
1 c confectioners sugar |
1/2 tsp almond extract |
2 – 3 tsp water |
Directions:
1. In a large bowl, cream butter and sugar until light and fluffy; beat in extract 2. Gradually add flour until dough forms a ball 3. Cover and refrigerate for 1 hour or until dough is easy to handle 4. Roll into 1” balls and place 1 inch apart on an ungreased cookie sheet 5. Using the end of a wooden spoon, make an indentation in the center of each 6. Fill with the jam 7. Bake at 350 for 14 – 18 minjutes or until edges are lightly browned 8. Cool on wire racks and drizzle with glaze |
