Quick and easy way to use leftover rice...either white or brown. Try this with other fruits as desired. Here, cooking time is actually chilling time Ingredients:
1 1/2 cups long-grain rice, cooked and chilled |
1/2 cup nonfat plain yogurt |
1/4 cup brown sugar, packed |
2 tablespoons brown sugar |
1 1/2 lime juice (fresh is best) |
1/2 cup strawberry, sliced |
1/2 cup blueberries |
1/2 cup green grape, seedless |
Directions:
1. Whisk yogurt, sugar and lime juice until smooth. 2. Slice grapes in half. 3. Combine berries with a light toss, add rice and toss. 4. Add yogurt mixture to rice-fruit mixture and toss again. |
