This is a very easy recipe that makes a beautiful spring breakfast or brunch. you assemble it the night before and put in the oven in the morning. French toast is a favorite of kids and adults. I found this recipe in on of those cookbooks you pick up at the grocery store check out by Betty Crocker. Ingredients:
1/2 cup all-purpose flour |
1 1/2 cups half and half |
1/4 cup sugar |
2 teaspoons vanilla |
1/4 teaspoon salt |
6 eggs |
1 loaf (1 lb) soft french bread cut into 1 cubes (8 cups) |
1 1/2 cups mixed berries (or berry of your choice) |
berry sauce |
1/2 cup sugar |
1/12 teaspoon cornstarch |
2 tablespoons orange juice |
1 cup frozen unsweetened mixed berries (or berry of your choice) |
1 1/2 cups fresh strawberries, cut in half |
Directions:
1. Grease bottom and sides of 13X9 inch glass baking dish with butter. 2. In a large bowl, beat flour, half and half, 1/4 cup sugar, the vanilla, salt and eggs with wire whisk until smooth. 3. Stir in bread and 1 1/2 cups and 1 1/2 cup of frozen mixed berries. 4. Spoon into baking dish, cover tightly and refrigerate at least 1 hour but no longer than 24. 5. Heat oven to 400 degrees, uncover bread mixture and back 25 to 35 minutes. 6. In 1 1/2 quart saucepan, stir together the 1/2 cup sugar and the cornstarch. Stir in the orange juice until smooth. stir in 1 cup mixed berries and heat to boiling over medium heat, stirring constantly. Cook about 4 minutes continuing to stir constantly until slightly thickened and take off heat. 7. Stir in strawberries just before serving. |
