Summer meets Autumn with this delicious blend of fresh apple cider and plump berries. This can be served hot or room temp and it's equally delicious either way! :) Ingredients:
1 1/2 cups berries(fresh or frozen is okay, and you can use raspberries, blueberries, blackberries, strawberries...or a mixture of all. i used a supply of my summer berries, frozen, so used raspberries, blueberries and strawberries |
1/2 gallon fresh apple cider |
1 1inch piece of crystallized ginger |
2 2 inch cinnamon sticks |
1t vanilla |
2 cups berry flavored sparkling water |
Directions:
1. In large saucepan or dutch oven, heat berries with cider, ginger and whole cinnamon sticks. 2. Heat on medium heat at a low simmer, stirring occasionally, for about 20-25 minutes. 3. Mixture should reduce by no more than 1/2. 4. Remove cinnamon sticks and any larger pieces of the ginger if they aren't soft. 5. Add vanilla. 6. Using a stick blender, blend mixture well making sure no large bits are still present. 7. If serving cold or room temp, strain mixture into serving pitcher.... I used a mesh strainer :), add sparkling water and give it a stir. Serve. 8. If serving hot, add sparkling water, give it a stir, heat briefly THEN carefully strain into a pitcher to serve. ;) |
