Ingredients:
berry cheesecake muffins |
1/3 cups butter softened |
3/4 cup sugar |
2 eggs |
1 1/2 cup flour |
1 1/2 tsp baking powder |
1 tsp cinnamon |
1/3 cup milk |
cream cheese filling |
2 packages (3 ounces each) cream cheese softened |
1/2 cup sugar |
1 egg |
3/4 fresh blueberries |
3/4 fresh raspberries or more blueberries if you like |
topping |
1/4 cup flour |
2 tablespoons brown sugar |
1/2 tsp cinnamon |
1 tablespoon cold butter |
Directions:
1. In large mixing bowl, cream butter and sugar. Add eggs and beat well. Combine the flour and baking powder and cinnamon; *** to creamed mix alternating with the milk. Fill the greased or paper lined muffin cups half fill. 2. For fillinf, in a small bowl, beat creamed cheese, sugar and egg until smooth. Fold in the berries. Drop a rounded tablespoonful into the center of the each muffin. For topping combine the flour, brown sugar and cinnamon into a small bowl. Cut in butter until crumbly. Sprinkle over the batter. Bake at 375 for 25-30 minutes. Cool for 5 minutes before removing from pans. Refrigerate leftovers. |
