Berries with Custard Sauce |

This Sauce it great for Summertime. It helps my kids to eat their fruit!! It is light too and better than plain old whip cream over berries. Ingredients:
1/2 cup sugar |
2 tablespoons cornstarch |
1 1/2 cups milk |
4 eggs, beaten |
1/2 cup sour cream |
1 1/2 teaspoons vanilla extract |
assorted fresh berries |
Directions:
1. In a Saucepan, combine sugar, cornstarch and salt. 2. Gradually stir in milk until smooth. 3. Bring to a boil over medium heat, stirring constantly. 4. Add small amount of mixture to the eggs. 5. Return all to pan, stirring constantly. 6. Cook and stir for 2 1/2 minutes or until mixture reaches 160 degrees. 7. Remove from heat. 8. Stir in sour cream and vanilla. 9. Set saucepan in ice and stir mixture for 5 minutes. 10. Cover and refrigerate until serving. 11. Serve over berries. |
