Ingredients:
2 cups fresh mixed berries |
2 tablespoons sugar |
1/2 lemon |
1/2 cup sour cream |
4 crepes |
berry coulis, recipe follows |
2 cups frozen berries (thawed) |
2 tablespoons sugar |
2 teaspoons lemon juice |
2 tablespoons rum, brandy, or chambord |
Directions:
1. In a bowl combine berries, sugar and a squirt of lemon. Toss to combine. Spread 2 tablespoons sour cream over crepe. Top with 1/4 of the berry mixture. Fold into quarters and serve with berry coulis. Repeat with remaining ingredients. 2. Berry coulis: 3. In a blender, combine all ingredients. Process until smooth. Pour through a fine-meshed sieve to remove the seeds and refrigerate until ready to serve. Yield: approximately 2 cups |
