A little different dressing for this spinach salad, from Ingredients:
4 hard boiled eggs |
1/4 pound bacon |
1 pound baby spinach, rinsed |
1 1/2 ounces croutons |
1/4 cup sliced fresh mushrooms |
1/2 onion, chopped |
2 tablespoons sugar |
1/2 teaspoon salt |
1/2 cup olive oil |
2 tablespoons and 2 teaspoons cider vinegar |
1/4 teaspoon ground black pepper |
1/2 teaspoon celery seed |
1 1/2 teaspoons dijon-style mustard |
Directions:
1. Cook bacon until browned, drain, crumble and set aside 2. Prepare the dressing in a blender by combining the onion, sugar, salt, oil, vinegar, pepper, celery seed and mustard 3. Blend until smooth 4. In a large salad bowl, combine the chopped hard boiled eggs, bacon, spinach, croutons and mushrooms 5. Toss to mix 6. Pour enough dressing over salad to lightly coat 7. Toss and serve |
