Ingredients:
3 pound(s) round steak 1 cubes |
3-4 carrots, large sliced thin |
1-2 yellow onion vertically sliced, crescents |
3 garlic cloves chopped |
thyme, fresh or dried |
1 container(s) large container, small white button mushrooms quartered |
1 bunch(es) curly leaf parsley coarsely chopped |
2 can(s) campbell's beef consumme |
1 bottle(s) large bottle red wine - cabernet |
flour for dredging meat |
1 package(s) high quality bacon, unflavored cubbed |
Directions:
1. Pat meat dry and lightly dredge in flour. Fry bacon cubes, remove to large roasting pan. Brown meat in bacon grease, remove to roasting pan. Saute until softened carrot, garlic, onion, thyme, salt and pepper and add to roasting pan. Add 1:1 cups consumme and red wine, until meat covered at least 1 over top. Cook, covered in 375 degree oven for at least 3 hours. Continue to add wine as cooking. One hour before serving, add mushrooms and cover pot to continue cooking. Just before serving, add handful of chopped parsley. |
