Husband made this chocolate ice cream recipe last week and it was so rich and creamy! The recipe comes from Ben and Jerry's Ice Cream and Dessert book which was published in 1987. If you have a weakness for chocolate you will love this recipe. Ingredients:
4 ounces unsweetened chocolate |
1 cup milk |
2 large eggs |
1 cup sugar |
1 cup heavy or whipping cream |
1 teaspoon vanilla extract |
pinch of salt |
4 x 2 finger-sized kit kats - chopped into squares |
Directions:
1. Melt the unsweetened chocolate in the top of a double boiler over hot, not boiling, water. 2. Gradually whisk in milk and heat. 3. Stir constantly, until smooth. 4. Remove from the heat and let cool. 5. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. 6. Whisk in the sugar, little at a time. 7. Continue whisking until completely blended, about 1 minute more. 8. Add the cream, vanilla, and salt and whisk to blend. 9. Pour the chocolate mix into the cream mixture and blend. 10. Cover and refrigerate until cold about 1-3 hours depending on your refrigerator. 11. Transfer the mixture to an ice cream maker. 12. After the ice cream stiffens (about 2 minutes before it is done) add the chopped Kit Kats. 13. On completion of the ice cream mixing cycle, transfer to the freezer following the manufacturers instructions. 14. Makes one quart. 15. We own an ice cream maker that has a smaller capacity and often cut these recipes in half. |
